Carrot Soup

The Indian discussion made me remember one of my favorite soups.  As usual, I started from a recipe in a cookbook and at the very first time started changing it.  Anyway, here it goes.

Ingredients:

Preparaton:

  1. Clean, peel and dice the carrots and potatoes.
  2. Put them in the water and turn on the heat.
  3. Add the "Soup Spices", with which I mean some sort of additive which will turn the water into stock.  They also come in neat cubes.
  4. Add half of the Coriander
  5. When it starts cooking, turn down the heat and let it gently cook for about 45 minutes.
  6. Mash the carrots and potatoes until it becomes a nice thick smooth soup.
  7. Add some Vinegar.  The vinegar is meant to make the soup taste like carrots: add some, taste it, add some more till you like it.
  8. Add some pepper and Ve-Tsin to make it hotter and hardier.
  9. Add the rest of the Coriander just before serving.
