Carrot Soup
The Indian discussion made me remember one of my favorite soups.
As usual, I started from a recipe in a cookbook and at the very first time started changing it.
Anyway, here it goes.
Ingredients:
- 4 parts water
- 2 parts carrots
- 1 part potatoes
- Vinegar
- Fresh Coriander
- Ve-Tsin
- "Soup Spices"
Preparaton:
- Clean, peel and dice the carrots and potatoes.
- Put them in the water and turn on the heat.
- Add the "Soup Spices", with which I mean some sort of additive which will turn the water into stock.
They also come in neat cubes.
- Add half of the Coriander
- When it starts cooking, turn down the heat and let it gently cook for about 45 minutes.
- Mash the carrots and potatoes until it becomes a nice thick smooth soup.
- Add some Vinegar.
The vinegar is meant to make the soup taste like carrots: add some, taste it, add some more till you like it.
- Add some pepper and Ve-Tsin to make it hotter and hardier.
- Add the rest of the Coriander just before serving.
